I have tried many white chicken chili recipes over the years and after a lot of trials and experimentation have created a delicious white chicken chili recipe that is not only tasty, but super quick and easy. This recipe is so easy that I should call it “Busy Mom Chicken Chili.” Actually, this recipe is perfect for anyone with limited time that still wants to put something yummy and filling on the table for dinner. I can have this chili made and on the table in 30 minutes! All of the ingredients can be stocked in your pantry, just waiting to be thrown together to create your last minute meal. This white chicken chili is perfect for those nights that you are running your kiddos to all of their after school and sporting activities and you don’t want to go through a dreaded fast food drive. This chili can also be made ahead of time and warmed up later. I usually double the recipe below just so we have leftovers!
2 (15.5-ounce) cans White Kidney Beans (cannellini beans), undrained
1 (10-ounce) can diced tomatoes with green chilies, undrained
1 (14.5-ounce) can chicken broth
1 (10.5-ounce) can cream of chicken soup
1 (12.5-ounce) can of chunk chicken breast in water, undrained
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/8 teaspoon ground red pepper
Use a small stock pot. Open canned chicken and place in pot; use a fork and separate chicken chucks. Add all other ingredients and bring chili to a boil. Reduce heat and simmer for 15 minutes, stirring occasionally. (*Tip – In a separate bowl, I gently whisk together the cream of chicken soup and the chicken broth prior to adding to the rest of the ingredients. This helps to speed up the breakdown of the cream of chicken soup.)
Add your TOPPINGS of choice! Top with shredded cheese, a dollop of sour cream, cilantro, tortilla strips, and tabasco.
Serve with crackers of choice! This chili is also great served with cornbread, but I rarely have time to make cornbread during the week!
